Festive Nut Roast

Chef Gino has the perfect recipe, with his Festive Nut Roast. Packed full of goodness, and extremely tasty, you'll definitely be wanting more 🙌


You may have guessed that the main ingredient may well be nuts, and a very tasty nut, Chestnuts!


Chestnuts are an edible tree nut, with a low-oil and high-water content, making them a great choice, as well as being high in fibre, and a great source of vitamin c

Festive Nut Roast Recipe:


Ingredients

2 Carrots 2 Sticks Celery 1 Leek 2 Cloves Garlic 200 g Chestnuts 75 g Dried Cranberries 1 Small bunch of Fresh Parsley 1 Tsp Smoked Paprika 1 Tsp Dried Thyme 1 Tsp Dried Oregano 4 tbsp Cashew Nut Butter 300 g Mixed Chopped Nuts (Almonds, Cashews, Walnuts) 1 Lemon 4 tbsp Milk Salt Pepper Olive Oil


Method:


  1. Pre heat the oven to 180 degrees Celsius

  2. Prepare and finely dice the carrots, onion, leek and celery

  3. In a saucepan, add 2tbsp of olive oil and gently soften the vegetables

  4. Once the vegetables are soft, finely dice the garlic and add to the pan followed by the paprika, thyme and oregano

  5. Roughly chop the chestnuts and add to the pan, combining all the ingredients together.

  6. Remove the ingredients from the pan and place into a bow

  7. Add the remaining ingredients (Chopped nuts, lemon zest, cranberries, cashew nut butter, chopped parsley, milk, salt and pepper) into the bowl

  8. Combine fully making sure all ingredients are evenly distributed throughout the mix.

  9. Place into a prepared loaf tin and cover with tin foil

  10. Bake at 180 Degrees Celsius for 30 minutes

  11. Remove the foil after 30 minutes and cook for a further 20 minutes or until golden on top

  12. Once cooked, remove from the oven and allow to cool for 5 minutes before slicing and serving
